Recipe for Passionfruit Curd
10 - 12 passionfruit (you will need 3/4 cup strained juice)
4 egg yolks
2 eggs
1 cup castor sugar
160g butter
- Remove pulp from passionfruit and place into a fine sieve over a bowl. Stir pulp with a spoon in sieve removing as much juice as possible. Keep seeds if you wish to add to curd.
- Whisk egg yolks, eggs and sugar until well combined.
- Place juice and butter into a saucepan and place over a medium-low heat.
- Stir until butter has melted and mixture has just ome to the boil.
- Remove from heat and slowly add egg mixture, whisking constantly.
- Return mixture to saucepan and place over med-low heat, stirring constantly with a whisk for approximately 8 minutes, or until the mixture becomes thick.
- Transfer to a bowl and stir in the passionfruit seeds if using.
- Cool mixture and transfer to sterilised screw-top or clip-lock jars.
- Refigerate.
